Football season is here! this means, every Sunday from now on I don’t get to see much of my husband till football is over lol. What is the main reason I enjoy football season? yes, the food! I have been making BBQ nachos for at least 7 years now. Its made with chicken breast smothered in BBQ sauce with layers of bacon and tons of cheese. These nachos are the best for game days! Also, the kids love it!

You can make BBQ nachos in a baking sheet, or a cast iron skillet. These nachos have 2 layers of cheesy goodness! They are quick to make, and its perfect for serving a crowd. When it comes to game day food, you cant go wrong with nachos! These nachos are extra special, as they are topped with chicken smothered in BBQ sauce. Perfect to feed a hungry crowd!

We love game day around here! For us, its more than just a game. We gather in our living room with our boys and have the best time eating good food, and watching our favorite team play.

Ingredients:

  • 2 chicken breasts
  • 1 tbl chili powder
  • 1 tbl garlic powder
  • 1 tsp salt
  • 1 tsp black ground pepper
  • 1/2 pack of bacon (about 8 strips)
  • 1 large tomato
  • 1/2 cups parsley
  • 1/2 medium red onion
  • 1 bag of tortilla chips ( 12 oz)
  • 1 avocado
  • 1/2 cup sour cream
  • 1 pound shredded cheese (fiesta blend)
  • Fresh jalapenos (optional)

How to make BBQ nachos

Preheat the oven to 375F

Start with chopping the bacon into small pieces, fry it on a pan. Reserve 2 table spoons of bacon fat (we will cook the chicken on this). Once the bacon is cooked, use a slotted spoon to take the bacon out onto a paper towel. The paper towel will help absorb some of the grease.

Cut the chicken breast into small bite sizes. Into a pan drizzle the reserved bacon fat and sauté the chicken breast on medium heat for 7-10 till lightly golden.

To the chicken add the spices. Mix well. Turn off the heat then add the BBQ sauce. Let the chicken cool while your chopping the rest of the ingredients.

Cut the tomato into small cubes then and place it into a strainer, to drain the liquid.

Chop the onion and parsley.

You can use either a sheet pan or a cast iron skillet to layer the BBQ nachos. This will not effect the outcome.

First layer half of the tortilla chips into a sheet pan then add half of every ingredient on top of the chips. Repeat this process for the other layer, but put cheese on top.

Cover with foil bake at 375F for 20 minutes, take the foil off and bake for another 5 minutes. Drizzle sour cream on top, and add chopped avocado! Enjoy!
