Creamy potatoes with green beans will make a great addition to your dinner table. This dish stars new potatoes and green beans that are smothered in a delicious garlic sauce which makes the perfect side dish.

The recipe for creamy potatoes with green beans were passed down from my dear Grandmother. She used to grow beans in her garden and this recipe was my mother’s favorite fall recipe.

This recipe is best if using red new potatoes (baby potato)

Off season

Even when it’s not the season for garden beans, you can substitute them with frozen green beans or just store-bought green beans. Although it is best to use fresh young green beans that you can find at a farmer’s market.

You either love green beans or you hate them. I personally love them! Especially when my mom makes this recipe for us. I always remember that the only thing my siblings and I used to fight over in this dish was the beans. The star of this dish is the delicious cream sauce and the beans! What are new potatoes?

New potatoes are immature potatoes harvested during spring or summer time. Sometimes they are called creamers or fingerlings. They are not a separate variety of potato, but younger versions of other varieties. The skin of new potatoes is generally thinner and flakier than the skin found on older potatoes.

Ingredients

  • 2 pounds red new potato
  • 1 pound green beans
  • 2 tablespoons oil
  • 1 big onion
  • 4 garlic cloves
  • 3/4 cup heavy cream
  • 2 tablespoons chicken gravy
  • 1 tablespoons butter
  • 1/2 cup of potato water
  • salt

How to make new potatoes in a garlic cream sauce place with green beans

Start by peeling the potatoes and cutting them in half. Put the potatoes into a big pot and cover with cold water, salt with 1 tablespoon of salt. Bring the water to a boil, then reduce the heat to a simmer.

Cook the potatoes till they are tender soft. You will know they are ready when you can easily pierce the potato with a knife.

Second, clean the green beans by cutting off the ends on both sides, wash them under cold water then cut them in half.

Add them to a pot, cover with water and season with 2 teaspoons with salt.

Bring the pot with beans to a boil. Once it boils, turn the heat down so the beans are simmering.

The potatoes and the green beans will cook for the same amount of time, about 30 minutes. This is the longest part of the entire recipe.

Make the garlic sauce

While the potato and green beans are cooking, make the garlic cream sauce.

Chop one onion into small cubes, sauté in a pan for 10 minutes in a medium low heat, or until the onions turn slightly golden.

Add minced garlic to the onions and cook together just for a minute.

Add 2 tablespoons of chicken gravy and 1 tablespoon of butter to the onion and sauté them together for two minutes.

Then pour in 3/4 cup heavy cream and 1/2 cup of the water from the potatoes. This will make the garlic sauce.

Once the potatoes and green beans are tender, drain the water from both.

Add the beans to the potatoes and pour over the garlic cream sauce.

Gently mix to combine. then simmer the new potatoes in a garlic cream sauce for 3 minutes then turn the heat off. Add salt to taste. I added 1/2 a teaspoon of salt to mine.

  • MAKE THE GARLIC SAUCE
    While the potato and green beans are cooking, make the garlic cream sauce.
