apple filling

  • 6 tart apples
  • 3 tbl granulated sugar
  • 2 tbl cinnamon
  • 3 tbl butter
  • 2 tbl heavy cream
  • 1/2 cup walnuts

Instructions

  • DOUGH
In a bowl with an electric mixer beat 3 sticks of softened butter with granulated sugar, brown sugar and vanilla. Mix it for 3 minutes till its light and fluffy. In a separate bowl mix the dry ingredients.
  • Once the butter and the sugars have combined. To easier incorporate the two together, add 1/3 of the flour mixture at a time to the butter. mix the two with a spatula. Put the bowl with the dough into the fridge to cool for 20 minutes.
  • While the dough is cooling, get your baking dish ready. Cover a deep baking sheet with parchment paper. It helps for the paper to stay in place if you crinkle the parchment paper first. Rub some butter on the parchment paper to help the dough from sticking.
    Preheat the oven to 375f.
  • Once the dough has had a chance to cool, spread 2/3 of the mixture into the oven safe sheet pan. the rest of the 1/3 of the mixture, put it back into the fridge till we need it again. Bake the dough for 20 minutes.
While the sheet is baking, make the apple filling.
  • APPLE FILLING
Roast the walnuts on a low heat for 5 minutes. Let them cool down.
  • Peel and chop the apples into slices. As you would for an apple pie.
  • Once all the apples are peeled and sliced, add them to a mixing bowl. To the bowl add the sugar, salt, and cinnamon. Give them a toss.
  • Place a deep pan on medium heat, to it add 3 tbl of butter then dd the apples to the hot pan. Cook the apples for 12 minutes. After 12 minutes add 2 tbl of heavy cream. Bring to a soft boil. Once it reaches a boil, turn off the heat.
  • Once the bottom layer is done baking, evenly spread the apple filling on top of it, then sprinkle the roasted walnuts on top of the apples.
  • Take the dough out of the fridge, crumble the dough on top of the apples. Bake for for 25 minutes. Let it cool completely then cut into bars!
