INSTANT POT BEEF TIPS WITH GRAVY RECIPE (EASY DINNER)

This is my favorite one-pot go to recipe for a busy weeknight! This instant pot beef tips with gravy recipe (easy dinner) is comfort food made with simple ingredients you already have in your kitchen. A favorite meal that is craved by all ages!

Ingredients
  

  • 1 1/2 pounds beef chuck roast (beef tips)
  • 3 medium carrots
  • 1  large yellow onion
  • 2 1/2 cups water or beef broth
  • 2 tbl olive oil
  • 1/2 cup fresh tomato puree or 1 tablespoon of tomato paste
  • 1 tsp salt
  • 1 tsp  Vegeta seasoning (optional)
  • 1/4 tsp  ground black pepper
  • 1 bay leaf
  • 1 1/2 TBL cornstarch
  • 1/4 cup heavy cream
  • parsley for topping

Instructions
 

  • Cut the beef into 1/2-inch cubes (bite-sized pieces) Turn your instant pot to the saute function on medium and let it heat up with the lid open. Drizzle in 2 tablespoons of olive oil and add the cubed beef. Season beef, then brown the meat on all sides using the instant pot on the saute setting on high pressure for 5-8 minutes till the liquid from the meat has evaporated. Stir the meat on occasion.
  • Chop onions, switch from high-pressure saute to low-pressure, saute onions with the meat for 3 minutes, then add in grated carrots, and continue to saute for another 3 minutes. Mixing it constantly to make sure it doesn’t burn. Sauteing the meat first makes a deliciously rich gravy.
  • Add in grated tomato (grate a fresh tomato- discarding the tomato skin) or tomato paste. My mom always used freshly grated tomatoes for the best results. Or you can use tomato paste if you don’t have fresh tomatoes. This is especially delicious in the summertime using garden tomatoes.
  • Continue to saute the tomato puree for 3 minutes then add water or beef stock and the bay leaf. Make sure to deglaze the bottom of the instant pot so you doubt get the burn notice.
  • Close the lid and set the instant pot to manual high pressure for 20 minutes. Don’t forget to turn the steam nozzle off so the steam doesn’t escape. If you are making beef gravy on the stove-Cover the stew pot with a lid and let it simmer for 40 minutes or until the meat is tender.
  • QUICK RELEASE THE PRESSURE ON THE INSTANT POT AND TAKE THE LID OFF.
    Make a cornstarch slurry by mixing 1 1/2 tablespoons cornstarch with 2 tablespoons cold water (if you like a thicker gravy add 2 tbl cornstarch) then add it to the beef gravy in the instant pot. Set the instant pot to sautee setting once again on high pressure and let the beef tips gravy come to a simmer. add 1/4 cup heavy cream. Taste for salt and pepper. Top it off with freshly chopped parsley. To make this a complete meal serve it over noodles, rice, or mashed potatoes.
