CUCUMBER AVOCADO AND CORN SALAD

A salad that goes perfect with any meal! A deliciously fresh salad with fresh corn and creamy avocado with added cucumbers to create the most perfect salad! Seasoned to perfection with a hit of lime juice for a tang! Its a salad that is loved by everyone!

Ingredients
  

  • 3 corn on the cobb
  • 1 pound mini cucumber
  • 1 pound cherry tomato
  • 1/2 purple onion
  • 2 avocados
  • 3 cloves garlic
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 3 tbl olive oil
  • 1/2 bunch cilantro
  • 2 tbl lime juice

Instructions
 

  • Bring a big pot of water to a boil then add shucked corn to the water and cook for 10 minutes.
  • Once the corn is done cooking, carefully take it out of the water using using tongs. Let the corn cool down. Place the corn on a cutting board and hold it standing up, with the other hand cut the kernel’s off. Place them in a large bowl.
  • Cut the mini cucumbers in half lengthwise then slice them into small pieces. Don’t cut them too thinly though.
  • To the bowl add, chopped quartered cherry tomatoes . Chopped avocado into the same size as the cucumber.
  • To the bowl add thinly chopped purple onion, minced garlic. and chopped cilantro. To the top of the salad add the salt, pepper, olive oil, and lime juice.
  • Gently mix the cucumber avocado and corn salad to combine. Keep the salad chilled till its ready to serve.
