Bring a big pot of water to a boil then add shucked corn to the water and cook for 10 minutes.
Once the corn is done cooking, carefully take it out of the water using using tongs. Let the corn cool down. Place the corn on a cutting board and hold it standing up, with the other hand cut the kernel’s off. Place them in a large bowl.
Cut the mini cucumbers in half lengthwise then slice them into small pieces. Don’t cut them too thinly though.
To the bowl add, chopped quartered cherry tomatoes . Chopped avocado into the same size as the cucumber.
To the bowl add thinly chopped purple onion, minced garlic. and chopped cilantro. To the top of the salad add the salt, pepper, olive oil, and lime juice.
Gently mix the cucumber avocado and corn salad to combine. Keep the salad chilled till its ready to serve.
