BBQ nachos

Ingredients
  

  • 2 chicken breast
  • 1 tbl chili powder
  • 1 tbl garlic powder
  • 1 tsp salt
  • 1 tsp black ground pepper
  • 1/2 pack bacon ( 8 strips)
  • 1 large tomato
  • 1/2 cup parsley
  • 1/2 medium red onion
  • 1 bag of tortilla chips (12oz)
  • 1 avocado
  • 1 lb shredded cheese fiesta blend
  • jalapeno if you want a kick

Instructions
 

  • Preheat the oven to 375F
    Start with chopping the bacon into small pieces, fry it on a pan. Reserve 2 table spoons of bacon fat (we will cook the chicken on this). Once the bacon is cooked, use a slotted spoon to take the bacon out onto a paper towel. The paper towel will help absorb some of the grease.
  • Cut the chicken breast into small bite sizes. Into a pan drizzle 2 tbl of the reserved bacon fat and sauté the chicken breast on medium heat for 7-10 till lightly golden.
  • To the chicken add the spices. Mix well. Turn off the heat then add the BBQ sauce. Let the chicken cool while your chopping the rest of the ingredients.
  • Cut the tomato into small cubes then and place it into a strainer, to drain the liquid.
  • Chop the onion and parsley.
  • You can use either a sheet pan or a cast iron skillet to layer the BBQ nachos. This will not effect the outcome.
    First layer half of the tortilla chips into a sheet pan then add half of every ingredient on top of the chips. Repeat this process for the other layer, but put cheese on top.
  • Cover with foil, Bake at 375F for 20 minutes. Take the foil off and bake for additional 5 minutes.
    Drizzle sour cream on top, and add chopped avocado! Enjoy!
