Greek yogurt coffee cake

This Homemade Coffee Cake is incredibly delicious, easy to make, and moist, with a layer of streusel in the middle of the cake and on top to ensure you get some of that delicious streusel in every bite. Perfect for dessert or breakfast!l

Ingredients
  

STREUSEL CRUMB
  • 1 3/4 cup all-purpose flour
  • 1 cup packed light brown sugar
  • 2 tsp  ground cinnamon
  • 1/4 tsp kosher salt
  • 3/4 cup  unsalted butter (COLD) cut into small pieces
  • 2 tbl milk
CAKE
  • 1/2 cup unsalted butter softened to room temperature
  • 2 cups all-purpose flour
  • 1 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 1 cup granulated sugar
  • 2  large eggs
  • 1 1/2 tsp vanilla extract
  • 1 cup Greek yogurt – homemade plain yogurt recipe
GLAZE
  • 1/2 cup powdered sugar
  • 1 tbl whole milk
  • Dash of cinnamon powder

Equipment

  • Large mixing bowl

  • 9×9 baking dish– loaf pan, cake pan, or springform pan
  • Parchment paper

Method
 

  1. Preheat the oven to 350°F. Line a 9×9 baking dish (or a spring pan with parchment paper and set aside. 
STREUSEL
  1. Add the flour, sugar, cinnamon, salt, milk, and butter to a small mixing bowl. Using a pastry cutter, fork, or your hands, mix until the mixture forms pea-sized clumps. Refrigerate while you make the cake. 
CAKE
  1. Add the dry ingredients (flour, baking powder, baking soda, and salt) to a small mixing bowl and whisk to combine. Set aside for now.
  2. Mix the sugar and butter in a large bowl using a hand mixer ( or add it to a bowl of a stand mixer with the paddle attachment) until fluffy.
    Using a low speed, beat in one egg at a time, then drizzle in the vanilla extract, mixing just until it combines. 
  3. Add half of the flour mixture to the butter and sugar. Mix it together using the hand mixer. Add half of the plain Greek yogurt. Beat together. Use a rubber spatula to scrape the walls of the bowl to incorporate and blend well. Try not to over-mix the cake batter. It should have a fluffy texture. Then add the remaining flour, mix, and lastly, add the rest of the Greek yogurt and combine.
  4. Add half of the batter to the prepared pan, spreading evenly. Then, sprinkle half the refrigerated streusel on top of the cake batter.  Add the rest of the batter, then spread the other half of the streusel on top of the cake.
  5. Bake for about 55-65 minutes. The top should be golden brown, and when a toothpick is inserted into the center, it should come out clean or have a few moist crumbs.
    Remove from the oven and let the cake cool on a wire rack.
GLAZE
  1. While your cake cools, make your glaze by whisking together the milk and sugar. Drizzle the Greek yogurt coffee cake with the glaze and enjoy this delicious cake!

Notes

Variations of this recipe

  • Nuts—For a fun and delicious crunch, try adding 1 1/4 cups of chopped pecans or walnuts to the streusel layers! – I would recommend roasting the nuts first to bring out the flavors.
  • Fruit: This cake is amazing with diced apples in it as well! I prefer using Granny Smith apples. – add them to the cake layers

 Baking Tips For Greek Yogurt Coffee Cake

  1. Room-temperature ingredients. For the best results when baking this coffee cake, your cold ingredients (like butter and eggs) should be at room temperature so they can be fully incorporated into the batter, except for the butter for the crumb topping, which should be COLD.
  2. Use real butter. This isn’t the time to use shortening or margarine.  Those perform differently in baking recipes; this recipe was only tested using real butter.
  3. Use fresh ingredients. Did you know using older baking soda or baking powder can affect how your cakes are baked? Over time, leavening agents (such as baking soda and powder) lose efficacy and won’t give your cakes a beautifully soft texture.
  4. Don’t overbeat the cake batter with the hand mixer. Mix to combine
  5. Do not skip the Greek yogurt! This is what will make a moist coffee cake! You can, however, substitute it for sour cream
