Homemade Pizza Sauce

Ingredients
  

  • 72 oz Fresh garden tomato’s
  • 1/3 cup Fresh basil (18g)
  • 1 tbl Fresh parsley
  • 1 tbl Oregano
  • 8 Garlic cloves (24g)
  • 1  Large onion (9oz)
  • 2 tbl Olive oil
  • 1 tbl Balsamic vinegar
  • 2 tsp Salt or to taste
  • 1/2 tbl Sugar
  • 1 tsp Ground black pepper

Equipment

  • Emersion blender
  • Roasting pan with a lid
  • Knife and cutting board
  • 16oz jars with lids
  • Canning pot
  • Jar lifter

Method
 

  1. Quart all of your tomato’s and add them directly into a large roasting pan
  2. Peel the garlic and onion, give them a rough chop, add them to the tomato’s.
    Add the fresh herbs to the pan.
    Drizzle with olive oil and balsamic vinegar.
    Add salt and pepper to taste.
    Mix everything in the roasting pan then close it with an oven safe lid. Bake in the oven at 400F for 2 hours
  3. Take the pan out of the oven, then transfer the tomato’s into a pot, use an emersion blender to blend the sauce till its smooth. Once the sauce is smooth, add the sugar, cook on medium heat till the sugar is dissolved. Taste, and add salt or black pepper if more is needed.
    ( you can use a stand mixer or a food processer to blend the tomato’s)
  4. Sanitize the jars and lids by either boiling them or by placing the dry jars into the microwave for 3 minutes. The lids HAVE to be boiled. Do not place them in the microwave!
    Transfer the pizza sauce while its still hot into the jar, leaving some headspace. Work carefully- the jars will be hot.
  5. Clean the rims of the jar with a wet paper towel. Then tightly close the jar with the lids
    Bring a pot to boil and place the closed jars into the water, make sure the jars are fully covered by water. Boil for 10 minutes.
    Using a jar lifter, takeout the jar and place it upside down on a tower, flip the can away from your face. Let the jar cool down completely before you turn it over. Enjoy now, or store in the pantry for years to come.

Notes

TIPS

  1. Use fresh tomato’s
  2. It is best to use fresh herbs
  3. Keep an eye on the tomato’s while they are roasting, every oven is different. You don’t want them to burn
  4. Don’t add the sugar to the tomato’s till after they roast
