Ingredients
  

  • 1 lb whole carrots
  • 2 tbl butter
  • 3 clives garlic- minced
  • 1 tsp Salt and pepper or to taste
  • 1 tsp smoked paprika
  • 1 1/2 tbl  balsamic vinegar glaze
  • 1 1/2 tbl honey
  • 5.2 oz Boursin cheese (garlic and herb)
  • 2 oz goat cheese or feta cheese
  • fresh parsley- chopped

Method
 

  1. Preheat Your Oven 420f
    Start by preheating your oven to 420°F (200°C). Roasting at a high temperature helps caramelize the carrots, giving them a rich, sweet flavor.
  2. Peel and Slice: Peel your carrots if necessary, then slice them into four if using larger carrots. This helps them cook more evenly and allows for that beautiful roasted edge.
    Season: Place the carrots on a baking sheet lined with parchment paper. In a microwave-safe container, add butter, garlic, salt, honey, smoked paprika, black pepper, and salt. Melt in the microwave for 45 seconds. Drizzle over the top. Toss the carrots to ensure they’re coated evenly.
  3. Spread the carrots in a single layer on the baking sheet so they roast evenly.
    Roast in the preheated oven for 20-25 minutes or until the carrots are tender and slightly caramelized. Toss the carrots halfway through roasting for extra caramelization.
    While the carrots are roasting, chop fresh parsley
  4. Spread the Boursin cheese to the bottom of the platter you want to use into a thick layer.
  5. Drizzle the Glaze: Remove the carrots from the oven and transfer them to a serving dish once the carrots are roasted. Drizzle the balsamic glaze over them. The glaze adds a beautiful glossy finish and a tangy flavor that complements the sweetness of the carrots.
    Add Goat Cheese: Sprinkle crumbled goat or feta cheese over the carrots. The cheese will soften slightly on contact, adding a creamy, tangy flavor.
    Finish with a light drizzle of Honey and fresh Parsley. Add some pomegranate seeds for a vibrant touch and a delicious crunch!
    Serve warm!
