- Chicken breasts – I use boneless, skinless chicken breasts because they’re lean, high in protein, and stay juicy after air frying. If you’re short on time, shredded rotisserie chicken is a great shortcut.
- Olive oil – Helps the seasonings stick to the chicken while keeping it moist during cooking.
- Plain Greek yogurt – I like using full-fat plain Greek yogurt because it’s rich, creamy, and packed with protein. If you prefer, nonfat Greek yogurt also works well.
- Mayonnaise – Just a small amount adds richness and balances the tanginess of the Greek yogurt. You can replace it with more Greek yogurt if you’d like a lighter version.
- Fresh lime juice – Freshly squeezed lime juice brightens the dip and ties all of the Southwest flavors together.
- Fresh corn – Charring the corn gives it a slightly smoky flavor and brings out its natural sweetness. Frozen corn can be substituted if fresh isn’t in season.

How to Make Southwest Chicken Dip
Step 1: Cook the Chicken
Brush the chicken breasts with olive oil and season both sides with the salt, garlic powder, onion powder, chili powder, cumin, smoked paprika, and black pepper.
Air fry at 380°F for 16–20 minutes, or until the internal temperature reaches 165°F.
Allow the chicken to rest for 5 to 10 minutes before shredding.


Step 2: Char the Corn
Heat a lightly oiled cast-iron skillet over medium-high heat.
Cook the fresh corn, turning occasionally until lightly charred on all sides.
Once cooled, cut the kernels from the cob.


Step 3: Mix the Vegetables
In a large bowl, combine:
- Charred corn
- Black beans- rinsed
- chopped Red bell pepper
- Thinly sliced Red onion
- Serrano pepper
- pressed Garlic
- Fresh cilantro
- Lime juice
- Salt
Toss everything together and let the vegetables marinate while you shred the chicken.

Step 4: Finish the Dip
Add the shredded chicken to the bowl.
Stir in the Greek yogurt and mayonnaise until everything is evenly coated.
Cover and refrigerate for at least 30 minutes before serving. This allows all of the flavors to blend together and makes the dip even better.
Meal Prep Tip
One of my favorite ways to make healthy eating easier is by prepping a little extra while I’m already cooking.
Whenever I make this Southwest Chicken Dip with Greek Yogurt, I intentionally chop an extra red onion, fresh corn, and red bell pepper. I also cook one extra chicken breast while the air fryer is already going.
I store everything in separate airtight containers in the refrigerator, and later in the week those ingredients become my Mexican Rice Bowl with almost no additional prep. It saves time, cuts down on food waste, and makes sticking to high-protein meals so much easier.
Little habits like this have made a huge difference during my weight loss journey because healthy meals are already halfway prepared when I need them.

- Let the dip chill before serving. Thirty minutes makes a big difference.
