Sourdough peach cobbler makes the perfect dessert! The sourdough balances so well with the sweet peaches. In less than an hour you can have a crowd pleaser dessert.

Topping
- 1 cup flour
- 1/2 cup sourdough starter. ( Leavened )
- 4 tbl cold butter
- 1/2 cup honey
- 1/2 cup heavy cream
- 1/2 cup milk
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp cinnamon

- 5 big peaches
- 1 cup organic sugar
- 1/4 tsp salt
- 1/4 tsp cinnamon
- 4 tbl butter

Start with the peaches, If your peaches are soft you will have to blanch them to easily remove the skin. Start by placing the peaches in a pot with boiling water for 1 minute. Using a slotted spoon take the peaches out and place them in a bowl with ice water to cool them off. Slip the skins off the peaches. If you have harder peaches you can just use a peeler to take the skin off. Or if you don’t mind the skin you can leave it on.Cut the peaches into slices, about 1/4 inch thick. Pre-heat the oven to 400F. Add all the peach slices into an oven safe pan, to the peaches add 1 cup sugar, 1/4 tsp salt, 1/2 tsp cinnamon, and 1 tbl flour, mix. To the top of the peaches add a 4tbl of cold sliced butter. Bake the peaches for 20 minutes.
Topping
While the peaches are baking, to a mixing bowl add 1 cup of flour, 1/2 cup honey, 1/2 tsp salt, 1/2 cup milk, 1/2 cup heavy cream, 1/2 tsp cinnamon, and 1/2 cup sourdough starter. Mix it all together. Read how to make sourdough starter here. Once the peaches are done baking, take it out of the oven. Then pour the batter onto the hot peaches. Lastly, add 1/2 a stick of butter slices on top of the batter. Bake at 400F for 25-30 minutes or until the dough is cooked through.
Let the sourdough peach cobbler cool down for 10 minutes before digging in. Serve with vanilla ice cream.
