peaches
- Start with the peaches, If your peaches are soft you will have to blanch them to easily remove the skin. Start by placing the peaches in a pot with boiling water for 1 minute. Using a slotted spoon take the peaches out and place them in a bowl with ice water to cool them off. Slip the skins off the peaches. If you have harder peaches you can just use a peeler to take the skin off. Or if you don’t mind the skin you can leave it on.Cut the peaches into slices, about 1/4 inch thick.
- Pre-heat the oven to 400F. Add all the peach slices into an oven safe pan, to the peaches add 1 cup sugar, 1/4 tsp salt, 1/2 tsp cinnamon, and 1 tbl flour, mix. To the top of the peaches add a 4tbl of cold sliced butter. Bake the peaches for 20 minutes.
Topping
- While the peaches are baking, to a mixing bowl add 1 cup of flour, 1/2 cup honey, 1/2 tsp salt, 1/2 cup milk, 1/2 cup heavy cream, 1/2 tsp cinnamon, and 1/2 cup sourdough starter. Mix it all together. Read how to make sourdough starter here.
- Once the peaches are done baking, take it out of the oven. Then pour the batter onto the hot peaches. Lastly, add 1/2 a stick of butter slices on top of the batter. Bake at 400F for 25-30 minutes or until the dough is cooked through.
- Let the sourdough peach cobbler cool down for 10 minutes before digging in. Serve with vanilla ice cream.
