Why This Recipe Works
I love this Green Beans Recipe because it turns simple green beans into a flavorful, colorful side dish that feels special enough for any occasion!
- Rich, Nutty Brown Butter: Browning the butter gives these green beans a deep, nutty flavor that makes them taste so much better than plain sautéed beans. It’s a simple step that adds so much richness, just like in my Creamy Potatoes with Green Beans.
- Perfectly Crisp-Tender Green Beans: Blanching the beans first keeps them bright green with just the right amount of crunch. A quick toss in brown butter finishes them off without making them soft or mushy.
- Creamy Lemony Whipped Feta: The smooth, tangy feta with Greek yogurt, fresh lemon juice, and garlic balances the buttery green beans beautifully. I love adding a creamy element to vegetable dishes, like these Roasted Bell Peppers.
- Crunchy, Warmly Spiced Pistachios: Toasted pistachios bring a wonderful crunch, while cumin, cinnamon, red pepper flakes, and everything bagel seasoning add layers of savory, slightly spicy flavor. They make every bite a little more interesting.
- Beautiful Enough for Special Occasions: The bright green beans, creamy white feta, and ruby-red pomegranate seeds look so pretty together on a serving platter. I love making this for holiday dinners, but it’s easy enough to enjoy with a regular weeknight meal, too!

Ingredients
- Fresh Green Beans – I like using fresh green beans for their crisp texture and bright color. They hold up beautifully when blanched and sautéed in brown butter. Look for firm, vibrant green beans with no soft spots.
- Pistachios – Raw, unsalted pistachios add a delicious crunch and nutty flavor. Toasting them with warm spices makes them even more flavorful. You can substitute chopped almonds or walnuts if needed.
- Spices – A combination of ground cumin, cinnamon, and red pepper flakes adds warmth, a little sweetness, and a gentle kick of heat. Feel free to reduce the red pepper flakes if you prefer a milder dish.
- Everything Bagel Seasoning – This adds a savory blend of sesame seeds, garlic, onion, and salt that complements the pistachios and green beans beautifully.
- Feta Cheese – The base of the creamy whipped feta that goes underneath the green beans. Its tangy, salty flavor balances the richness of the brown butter. I like using block feta for the smoothest texture.
- Greek Yogurt – Makes the whipped feta extra creamy and smooth while adding a little tanginess. Full-fat Greek yogurt works best, but sour cream is a good substitute.
- Fresh Lemon Juice and Zest – Lemon juice brightens the whipped feta, while fresh zest adds a citrusy finish to the dish. I recommend using fresh lemons for the best flavor.
- Garlic – Fresh garlic cloves give the whipped feta a bold, savory flavor. I like using fresh garlic, but you can reduce the amount if you prefer a milder taste.
- Pomegranate Seeds – Add a beautiful pop of color, juicy sweetness, and a little crunch. They balance the salty feta and buttery green beans perfectly. If pomegranates aren’t available, dried cranberries can work as an alternative, although they’ll be sweeter and chewier.

Substitutions & Variations
Here are some of my favorite substitutions and variations:
- Nut Options: I love using pistachios for their crunch and nutty flavor, but chopped almonds, walnuts, or pecans work just as well. Toast them lightly before adding the spices for the best texture.
- Cheese Options: I usually make the whipped feta with Greek yogurt, but you can swap in cream cheese for a thicker, creamier spread. Goat cheese also works well if you prefer a slightly tangier flavor.
- Spice Adjustments: I like the warmth of cumin and cinnamon with a little heat from red pepper flakes. You can reduce the pepper flakes for a milder dish or add a pinch of smoked paprika for a smoky flavor.

FAQs
Yes, I recommend blanching the green beans first to keep them bright green and crisp-tender. Boiling them for about 4 minutes and immediately transferring them to ice water stops the cooking process. This also helps prevent them from becoming mushy when sautéed in brown butter.
Yes, frozen green beans work if fresh ones aren’t available. Thaw them completely and pat them dry before adding them to the skillet. You can skip the blanching step since frozen green beans are usually blanched before freezing.
Chopped almonds, walnuts, or pecans are great alternatives to pistachios. I recommend toasting them with the same spices to bring out their nutty flavor. Sunflower seeds are another option if you need a nut-free substitute.
The key is to avoid overcooking them and make sure they’re completely dry before sautéing. After blanching, transfer the beans to ice water, drain thoroughly, and pat dry with a clean kitchen towel. This helps them stay crisp-tender and allows the brown butter to coat them nicely.
Store leftover green beans and whipped feta separately in airtight containers in the refrigerator for up to 3–4 days. Reheat the green beans gently in a skillet over medium-low heat until warmed through, then serve them over the chilled whipped feta. I don’t recommend freezing this dish because the green beans can become soft and the whipped feta may lose its creamy texture.

Green Beans Recipe with Whipped Feta
Ingredients
For the Green Beans:
- 24 ounces green beans fresh, trimmed
- ¼ cup unsalted butter
- 1 cup raw unsalted, shelled pistachios, roughly chopped
- 1 teaspoon ground cumin
- 1 teaspoon cinnamon
- 1 teaspoon red pepper flakes
- 2 tablespoons everything bagel seasoning
- Salt for blanching (1 teaspoon per quart of water)
For the Lemony Whipped Feta:
- 4 ounces feta
- ¼ cup Greek yogurt
- 1½ tablespoons lemon juice
- 1½ tablespoons olive oil
- 2-3 garlic cloves
For Garnish:
- ¾ cup pomegranate seeds
- lemon zest fresh
Instructions
- Bring a large pot of water to a boil. Add 1 teaspoon of salt per quart of water, then add the green beans. Cook for about 4 minutes, until crisp-tender. Immediately transfer the beans to ice water. Once cool, drain thoroughly and pat dry.
- Heat a large, dry skillet over medium-low heat. Add the chopped pistachios and toast for 3–5 minutes, stirring frequently, until fragrant and lightly golden.
- Stir in the cumin, cinnamon, and red pepper flakes during the last 30 seconds of toasting. Remove the skillet from the heat, stir in the everything bagel seasoning, and transfer the pistachio mixture to a bowl.
- In the same skillet, melt the butter over medium heat, stirring frequently, until the milk solids turn golden brown and smell nutty. Reduce the heat to low.
- Add the dried green beans to the brown butter and sauté for 5–6 minutes, until heated through. Stir in three-quarters of the pistachio mixture near the end of cooking. Remove the skillet from the heat and taste before adding any additional salt.
- In a small food processor, blend the feta, Greek yogurt, lemon juice, olive oil, and garlic until smooth and creamy, scraping down the sides as needed.
- Spread the whipped feta in a thin layer over a serving platter. Top with the green beans, spooning over any brown butter and pistachios from the skillet. Finish with the reserved pistachio mixture, pomegranate seeds, and fresh lemon zest.
Notes
- Choose fresh green beans. Look for firm, bright green beans that snap easily when bent. Avoid beans that look wilted or have brown spots.
- Don’t skip the ice bath. Transferring the blanched green beans straight into ice water stops the cooking process and helps preserve their bright color and crisp-tender texture.
- Dry the beans thoroughly. Pat the green beans dry after blanching. Excess moisture can cause the butter to splatter and prevent it from coating the beans evenly.
- Watch the pistachios closely. Toast them over medium-low heat and stir frequently to prevent burning. Add the spices during the last 30 seconds so they become fragrant without scorching.
- Keep an eye on the brown butter. Stir frequently as the butter melts and starts to foam. Once you see golden brown bits and smell a nutty aroma, reduce the heat to prevent burning.
- Use block feta for the best texture. Feta packed in brine usually blends into a smoother, creamier spread than pre-crumbled feta.
- Adjust the whipped feta consistency. If it’s too thick, add a teaspoon of water or olive oil at a time until smooth and spreadable.
- Taste before adding salt. Feta and everything bagel seasoning already contain salt, so taste the finished green beans before adding any extra.
- Save some pistachios for garnish. Stir most of the spiced pistachios into the green beans, but reserve a handful for the top. This keeps some of their crunch intact.
- Prepare components ahead. Blanch the green beans, toast the pistachios, and make the whipped feta up to a day in advance. Refrigerate the beans and feta separately, and keep the cooled pistachios in an airtight container.
- Assemble just before serving. Spread the whipped feta on a platter, add the warm green beans, and finish with pomegranate seeds, pistachios, and lemon zest. This keeps the toppings fresh and crunchy.
- Reheat leftovers gently. Warm the green beans in a skillet over medium-low heat until heated through. Add them to the whipped feta just before serving to keep the creamy base from becoming watery.
