This no-bake cherry cheesecake is a classic crowd-pleaser that’s sweet and simple. I got this recipe from my dear sister. I have early childhood memories of this amazing no bake cheesecake. Growing up I didn’t even know a baked cheesecake existed! we always had this cheesecake for occasions. A sweet ending to family dinners.
After I got married I would make this amazing no bake cheesecake for my husband and he loves it! he takes the whole pan and eats directly from there lol.
I love this easy recipe because it is so delicious and easy to make! you can buy the premade graham crust from Walmart, which is what we always did. But you can also make one beautiful tall cheesecake by using a springform!
The best part of this recipe is that it is a 5 ingredient cheesecake recipe that is a great make-ahead dessert with an irrisitable creamy filling!
Tools you will need
- Mixer (either hand mixer or a stand mixer)
- Mixing bowls
- spatula
- 9 inch springform if using
- small strainer
Ingredients
- 2 packs room temperature full fat cream cheese
- 16 oz cold heavy cream
- 1 cup white granulated sugar
- 2 9 inch plates of graham ready crust
- 1 1/2 packets of unflavored gelatin – sets the cheesecake. Don’t worry, this will NOT make the cheesecake like jello. Were using a little amount just to ensure it sets.
- Any topping you like. A classic is cherry pie filling – our favorite is cherry, but you can use raspberry or homemade strawberry compote! all will be delicious. Or enjoy it simple, with no topping.
If your making 1 tall cheesecake you will need :
- 7oz of graham crackers (or any cookie you’d like to use)
- 7 table spoons melted butter if your making your own crust
How to make one tall cheesecake?
If you are using a pre made crust pie pan, skip this step.
Start with placing the cookies into a food processor and pulse them until they become fine crumbs. Transfer the graham crust to a bowl, to that bowl add 7 table spoons of melted butter and mix.
take out your 9 inch springform , you will add the crumb to the bottom of the springform then also bring it up the walls all around. You can use a tall glass to help smooth the walls. Then place the springform into the freezer until we will need it again.
How to make the cheesecake filling
Add the room temperature cream cheese and sugar to a large mixing bowl. Next, use an electric mixer (hand mixer or a kitchen aid) to whip the cream cheese and sugar until it is smooth and has a fluffy texture without lumps, be patient with this process. It may take 7-10 minutes. This will result in a silkier no bake cheesecake. Scrape down the sides of the bowl using a rubber spatula every 2 minutes to ensure everything mixes equally. Set the cream cheese aside.
In a clean bowl, beat the cold heavy whipping cream until it forms stiff peaks. ( about 6 minutes) Be careful to not over beat the whipping cream it will start to turn into butter if you over beat it.
Add the gelatin
In a microwave-safe cup add 1/4 cup of water and 1 1/2 packets of unflavored gelatin, then using a teaspoon mix the gelatin into the water. Place the cup with the water and gelatin into the microwave for 20 seconds to help the gelatin melt.
Let the hot gelatin cool down for 5 minutes while stirring it occasionally.
While the gelatin is cooling, using a spatula combine the cream cheese to the whipped cream.
Once the gelatin has cooled down, strain it using a small strainer into the cream cheese and whipping cream. (make sure the gelatin is warm, if its hot it will melt the whipping cream)
Combine it all together on the lowest setting on your mixer just for it to come all together.
Pour the cream cheese mixture into the crust pans (or into the homemade crust in the springform pan)
Smooth out the top and place in the fridge over night to set. ( or at least 12 hours)
The next day or when you are ready to serve it, loosen the sides of the cheesecake using a knife. open the springform and take out this amazing no bake cheesecake.
Top if off with cherry pie filling and enjoy!
