The secret to crispy zucchini fritters?
Zucchini is a fruit ( yes it is a fruit! I know, shocking! ) that retains a lot of water in it. If left as is the zucchini fritters will become soggy when frying. So how do you achieve golden brown edges that are crispy on the outside and cheesy on the inside? You have to drain the water from it, the easiest way to do this is to place the shredded fresh zucchini into a thin towel such as flour sack towels. Then start to twist the towel till there is no longer any liquid left. This will leave you with shredded zucchini that is perfect to fry!

- 1 cup bread crumbs
- 2 eggs
- 2 cloves garlic
- 1/2 cup all-purpose flour
- 1 cup cheese- you can use mozzarella, parmesan, or white cheddar
- salt – about 1 1/2 tsp
- ground black pepper to taste – 1/4 tsp

To a small bowl add 1/4 cup sour cream, 1/4 cup heavy cream, 1 tbl fresh chopped dill, 2 cloves garlic pressed, and salt to taste. Mix to combine. Keep in the fridge till the zucchini fritters are ready.

First start with washing the zucchini then grate it using a grater on the large setting. Lay a towel on the countertop and place the grated zucchini in the middle. Pick up all four corners of the towel and start to twist the towel till you can get as much liquid out as you can. Press on the bottom of the towel with one hand to get the last of the liquid out, to ensure you don’t get soggy fritters.


In a large bowl add the zucchini, 1 cup bread crumbs, 2 eggs, 2 cloves garlic pressed, 1/2 cup flour, 1 cup grated cheese, 1 1/2 tsp salt, 1/4 tsp black pepper. Mix to combine.

Preheat a large skillet
on medium heat then pour enough oil to cover the bottom of the pan (I used olive oil) use an ice cream scoop to scoop the zucchini mixture into the pan to get even fritters, you can use a measuring cup as well. Use the top of a fork to flatten the zucchini fritters on top a little.

Fry on each side for 2-3 minutes until the zucchini fritters are golden. Prepare a paper towel-lined plate to place the fried zucchini fritters to help absorb extra oil.
Serve hot with a heaping dollop of the sour cream dipping sauce and a little bit of chopped fresh green onions to garnish! This is one of the best side dishes I serve in my home quite often! It is a great way to serve as a side to a main course such as mashed potatoes, chicken soup, fresh salad,or as a delicious appetizer! My personal favorite way to have them is for breakfast with a fried egg on top with a runny yolk and a slice of sourdough bread!

Leftover fritters are great the next day as well! keep them in an airtight container in the fridge and enjoy them on the go! To reheat them you can use a toaster oven, air fryer, or microwave.
