These chicken sandwich melts turn out crunchy on the bottom, and soft and cheesy on top! One of our absolute favorite appetizers around here.

Probably the easiest recipe I have written so far! I don’t even know if I should call this a recipe, these hot chicken sandwich melts are ridiculously easy to make! I love recipes that are quick and delicious. My niece texted me a few weeks ago asking for the sandwiches I made for last Thanksgiving dinner, and it reminded me how much everyone loved them. immediately went to the grocery store to pick up cheese and sliced bread to make this recipe for you guys!
This appetizer is loaded with cheese, chicken, and a little bit of tomato. I try to have canned chicken in my pantry at all times just so I can whip up this quick recipe.
They are great for big gatherings or unexpected guests. Shoot, or even weekday dinner with your family. Kids love these sandwiches! I often make chicken sandwich melts for my kids at lunch time.
Ingredients

- 12.5 ounces of canned chunk chicken
- 1/2 onion
- 1 small tomato
- 1/2 cup mayonnaise
- 3 garlic cloves
- 8-10 pieces of sliced bread
- 1 cup shredded mozzarella cheese
- 1 teaspoon smoked paprika
- 1 teaspoon ground black pepper
- 1 tablespoon chopped parsley
How to make chicken sandwich melts
Pre-heat the oven to 375f
First start with draining the liquid from the canned chicken, then add the chicken to a small mixing bowl.
To the chicken add 1/2 of an onion thinly cubed.
Then to the bowl add 1/2 cup of mayonnaise, 3 garlic cloves that had been pressed, 1 teaspoon smoked paprika, 1 teaspoon of ground black pepper, and 1 tablespoon of chopped parsley. With a fork mix it very well.

Next chop 1 small tomato into small cubes and put it into a sieve to drain for a few minutes. This helps to prevent the sandwiches from becoming soggy.

While the tomato is draining, to the chicken add 1 cup of cheese and give it a good mix. Discard the liquid from the tomatoes and add the tomato cubes into the chicken, and gently mix it in.

Spread 2 tablespoons of the chicken mixture onto each slice of bread, then place them on a baking sheet.
Bake the chicken sandwich melts in the oven for 8-10 minutes.
This serving makes 8-10 sandwiches, trust me you will want to double the recipe! especially if you’re feeding a crowd.

Meat+cheese+carbs=a hit with my boys. Chicken is also definitely the cheapest meat around here so this might be quite helpful on filling the bottomless pits
