For a luxurious treat like a Dubai bar, it is surprisingly easy to make! I kept preparing myself for a challenge, but once I started to make them, I was surprised at how simple it was! You can’t go wrong here! My biggest tip would be to ensure the chocolate is fully set before removing it from silicone chocolate molds. The hardest part of this whole recipe is not to devour the kataifi pistachio filling before it makes its way into the chocolate molds.

Ingredients

  • 150g kataifi pastry – shredded phyllo dough will be toasted to make it into crunchy kataifi
  • 2 tbsp unsalted butter – to toast the kataifi
  • 400g  pistachio crème – makes the most irresistible creamy pistachio filling 
  • 1/4 cup tahini – adds a touch of nuttiness and brings out the pistachio flavours
  • 300g of chocolate of your choice- My favorite is semi-sweet. But you can use dark chocolate (or milk)
  • Optional: Crushed pistachios and edible gold dust for garnish

​I used both molds, and I loved both of them! I do have to say the thicker one has much more filling in it, and it was a little overwhelming. However, the viral bars you most likely see on social media use thicker molds. So, it really is a personal preference. 


​Step-by-step- recipe

Toast the Kataifi

In a large pan, melt butter over medium heat. Add the kataifi pastry and toast it, stirring frequently, until golden and crispy. The process may take about 7-10 minutes. Once it has a golden color, transfer it to a large mixing bowl.

Combine the Mixture

Combine the toasted kataifi with the pistachio crème and tahini in a large bowl. Mix thoroughly until all ingredients are evenly distributed, forming a slightly sticky, aromatic filling with a hint of nuttiness. Resist the temptation of eating it as is 😉 The urge was too powerful for me, hahaha. The stuffing is so delicious I can eat it with a spoonful!

Temper the Chocolate

Put a metal bowl into the freezer for 20 minutes.

Place the chocolate in a large microwave-safe bowl then microwave in 15-second intervals, stirring after each interval to prevent overheating. Transfer one-third of the melted chocolate into a frozen bowl to temper the chocolate. Whisk vigorously until it cools and thickens slightly, then combine it back with the remaining chocolate. Stir well to achieve a glossy, smooth consistency.

Prepare the Molds

Using a pastry brush or spoon, coat each cavity of your chocolate mold with the tempered chocolate. Tilt and rotate the mold to ensure an even coating, then invert it over the bowl to drain the excess chocolate so you have a thin layer of the melted chocolate. Place the mold in the refrigerator for 10 minutes to set the chocolate shell.

Add the Filling

Once the chocolate shells are firm, spoon the crunchy pistachio filling mixture into each cavity. Press gently to pack the filling evenly, leaving a small gap at the top for sealing with more chocolate.

Seal with Chocolate

Pour the remaining tempered chocolate over the filling to seal each cavity. Use a bench scraper or the back of a knife to smooth the tops, gently tap the mold on the counter to release air bubbles. Refrigerate the mold for 15-20 minutes until the chocolate is fully set.

Unmold and Garnish

Carefully release the chocolates from the mold by gently pressing or tapping. Place the Dubai chocolate on a serving plate and brush each piece lightly with edible gold dust for an opulent, luxurious finish. Optionally, sprinkle crushed pistachios over the chocolate for added texture and visual appeal.


Storage Tips

  • Wrap each piece into parchment paper.
  • Store these treats in an airtight container in the refrigerator for up to five days.
  • Serve chilled or at room temperature for the best experience.
