Creamy ranch chicken and broccoli casserole is an easy weeknight dinner that even the picky eaters will love! This casserole dish has creamy mashed potatoes on the bottom with a cheesy chicken with broccoli mixture, baked in the oven till it’s golden brown.

Growing up in a Russian household there was no such thing as casseroles, I think my generation of Slavik population is starting to add them into their dinner rotation. Now that I am a busy mom I am so glad I found casseroles! They are an easy way to get dinner on the table that tastes great! To make this recipe even easier to make, you can use rotisserie chicken instead of cooking chicken tenders!

Casseroles are the best way to pack flavors and vegetables into! you can add any vegetable that your family likes. You can add bell peppers, mushrooms, brussels sprouts, or zucchini to this broccoli cheddar casserole. Casseroles are a great way to add in any vegetables in your fridge that need to be used up!

Ingredients for the mashed potatoes:

  • 2 pounds russet potatoes
  • 1/2 cup milk
  • 1 tablespoon of salt
  • 3 tablespoons parmesan cheese
  • 1 egg yolk
  • 1/4 cup parmesan cheese

  • 1 pound chicken tenders or chicken breast
  • 2 tablespoons dry ranch seasoning
  • 1 tablespoon butter
  • 2 tablespoons of olive oil
  • 1 onion
  • 3 garlic cloves
  • 1/2 cup sour cream
  • 1/3 cup mayonnaise
  • 4 oz shredded mozzarella cheese
  • 4 oz shredded sharp cheddar cheese
  • 12 oz frozen broccoli
  • 1/2 – 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 cup panko bread crumbs

How to make creamy ranch chicken and broccoli casserole

To make creamy ranch chicken with broccoli casserole, start by peeling and boiling the potatoes till they are tender.

While the potatoes are cooking start on the chicken.

Remove the tendon from the chicken tenderloin. To do that Grab the exposed end of the tendon, using a paper towel to get a better grip, and slip it between the tines of a fork. Then, pull up on the tendon while keeping the fork in place, thereby yanking it free from the meat.

Chop the chicken tenderloins into small bite-sized cubes. Put a large pan on medium heat on the stove and let it heat up for a few minutes. Then add 2 tablespoons of olive oil and the chicken. Season the chicken with 2 tablespoons of dry ranch seasoning, and sautee the chicken for 5 minutes while stirring it on occasion so it has a chance to cook from all sides. Add 1 tablespoon of butter,3 cloves of minced garlic, and 1 chopped onion, and continue to saute for another 2 minutes.

Transfer the chicken to a large bowl.

To the bowl add 1/2 cup sour cream, 1/3 cup mayonnaise, and freshly grated mozzarella cheese and sharp cheddar cheese (4 oz of each.)

Chop the broccoli into smaller pieces, then add 12oz of frozen broccoli florets (or you can use fresh broccoli florets). Mix all the ingredients together to make the cheesy broccoli casserole topping.

Once the potatoes are done cooking, drain the liquid then smash the potatoes till they are creamy with no lumps. I prefer to use a hand mixer to make them smooth, or you can use a potato masher. Then add 1/2 cup of whole milk, 1 egg yolk, 3 tablespoons of butter, and 1/4 cup of parmesan cheese. Mix it all together to form a creamy mashed potato.

To a casserole dish add the mashed potatoes, then evenly spread the ranch chicken with cheesy broccoli over the mashed potatoes. Sprinkle 1 cup of the panko bread crumbs ( or you can use crushed ritz crackers) all over the top.

Bake uncovered at 375F for 25-30 minutes, then broil for a couple of minutes or until slightly golden brown.

This makes an amazing side dish for a potluck or a main dish for a busy weekday! The melted cheese creates the most satisfying cheese pull!

This recipe was inspired by the famous broccoli rice casserole recipe, except I noticed that many casserole dishes use cream of chicken soup or cream of mushroom soup. If you have that on hand and would like to skip the sour cream and mayonnaise, you totally can!

Ингредиенты для картофельного пюре:

  • 1 луковица
  • 3 зубчика чеснока
  • 1/2 стакана сметаны

  • 4 унции тертого желтого сыра чеддер
  • 12 унций замороженной брокколи
  • 1/2 — 1 чайная ложка соли
  • 1/4 чайной ложки молотого черного перца
  • 1 стакан панировочных сухарей панко

Выпекайте без крышки при 375F в течение 25-30 минут, затем жарьте в течение пары минут или до слегка золотисто-коричневого цвета.
